My post on curacha a few days back lead me to joey’s post on the creature and the recipe she cooked did some “alavar” sauce… marketman & family received a large package of alavar sauce from a friend several months back and this is what we used it for… prawns in alavar.

And she prepared it with alavar sauce, here. i would have to say that curacha is at the bottom of my crab list, and i was from zamboanga. your description of the flesh as dry is normal. i had always found it very dry and almost sandy. curacha with alavar sauce is good though.

Another of c’s generous relatives gave us a kilo of alavar sauce. a popular culinary highlight of zamboanga, alavar sauce is a deliciously secret blend of coconut milk 500 grams alavar sauce (approximate – depends on how sauce-y you want your dish…just a tip, the extra sauce is amazing on steaming hot rice!)

Last time alavar s was in cebu (there s an alavar s in manila) was about eight years ago. it s now back along salinas drive, with its signature dishes: kuracha and crabs in season from zamboanga, prawn alavar, alavar rice served on a sizzling plate with alavar sauce and crabmeat flakes.
